At what age does a girl become a woman and a single woman a spinster?
I would say a girl becomes a woman at 25 and a single woman a spinster at 35. Any opinions?

I agree. I have seen it as well. By 35 they are in full panic mode. Men in their 30's hwever experience the opposite. They can pick up women in their 20's easier than men in their 20's.

Different people (female and male) mature at different times. Some can be womanly or manly at 15. Some might still behave like kids and not step up to adult responsibilities into their 30's. In the U.S. people are considered and treated like adults beginning at age 18.
There is no relevance to terms like "spinster" in the 21st century. That implies a lack of choice and desperation, and proscribed sociological gender roles - which no longer are valid in today's society.

I'd say a girl becomes a woman @ around 19 and doesn't become a 'spinster' ever. Spinster is a term used in the Elizabethan era and is no longer used. Even then it related to women that could no longer have children. So ask your granny when she stopped having periods and you'd have your answer.
